4 cooked chicken slices
2 slices of low fat cheddar cheese (50%) (~25g)
Spread of choice
1) Cut the cucumber in half (vertically) and scoop out the seeds and discard.
2) Use a spread of choice on one of the cucumber subs and layer the slices of cooked chicken. Sprinkle some salt and black pepper.
3) Place the cheese slices on the other cucumber sub.
4) Combine the two halves, slice in half (if preferred) and enjoy.
